There must be a way to have this layout stretch out horizontally. I think this standard sizing is just plain ugly. I would like to be able to use the space to the left and right! Ughhh!
Basically in the HTML of your site, you can play with the width of your blog by adjusting just a couple numbers. In addition to changing the pixel width, you can also set it to percentages. For instance, in my blog I have the content set to 90%, the Main content at 70%, and the sidebar at 25%. What this does is adjust the width of the page based on the users screen size.
There might be sites out there that better explain it than I do. A good place to do a search is in the Blogger help section. Just do a search on Changing column widths.

I did the same thing, I also found a way to add the column on the left. I now have a wider center main column and two side-bars - one on either side.
